Chicken Embryos For the Lao Stomach



You'll never guess what I had to eat last night. One of my new Lao friends Alek invited me and two of the other foreign teachers on staff at the school where we're teaching to her home for an authentic Lao dinner. It was so sweet! She had spent all day preparing, the table was set, and we sat down to the delicacy of hard boiled chicken embryos. Yep! You scoop the yolk, the placenta, and the baby chick out of the shell with a small spoon and crunch away at the wings, bones, etc. The two other foreign teachers declined, but I dove right in.
